While waiting for our own estate grown and distilled whiskey to age, we sourced and barreled our second release of whiskey bourbon and finished it in freshly emptied 50 year old Caribbean Rum Casks . The taste plays off the sweetness of the rum and corn, the spice of rye and the nutty flavors of malted barley.
